做法:春笋切(qiē )成(chéng )片后加少(shǎo )许盐捞出后用清水浸泡,生姜切片(piàn ),葱切(qiē )成段(duàn )。锅(guō )烧热,倒入2勺(sháo )油,放入生姜、春笋、牛肉片(piàn )、葱段翻炒1分钟左右。再加入(rù )生抽、老抽、蚝油翻炒(chǎo )均匀,加入少量清水半掩住(zhù )春笋,盖上锅盖大火煮开后转(zhuǎn )中(zhōng )火。煮到水(shuǐ )快熬干的时候加入(rù )盐,翻炒(chǎo )均匀(yún )稍收汁时盖上锅盖(gài )焖。
