做法:春笋(sǔn )切成片后(hòu )加少许盐捞出后用清水浸泡(pào ),生姜切片,葱切(qiē )成段。锅烧热,倒入2勺(sháo )油,放入(rù )生姜、春笋、牛(niú )肉片、葱段翻(fān )炒1分钟(zhōng )左右。再加入生抽(chōu )、老抽、蚝油(yóu )翻炒均(jun1 )匀,加入少量(liàng )清水半(bàn )掩住春笋,盖上锅盖大火煮开后转中火。煮到水(shuǐ )快熬干的时(shí )候加入盐,翻(fān )炒均匀稍收(shōu )汁时(shí )盖上锅盖焖。
