做法:春笋切成片后加少许盐捞出后用清水浸泡,生姜切片,葱切成段(duàn )。锅烧热,倒(dǎo )入2勺(sháo )油,放入生(shēng )姜(jiāng )、春笋(sǔn )、牛(niú )肉片、葱段翻炒1分钟左右。再加入生(shēng )抽、老抽、蚝油翻炒均匀,加入少量清水(shuǐ )半掩住春笋,盖上(shàng )锅盖大火煮(zhǔ )开后(hòu )转中火。煮到(dào )水快熬干的时(shí )候加入盐,翻炒均匀稍收汁(zhī )时盖上(shàng )锅(guō )盖(gài )焖。
