做法:春笋切成片后加少许(xǔ )盐捞出(chū )后(hòu )用(yòng )清水浸泡,生姜切片,葱切成段(duàn )。锅烧(shāo )热,倒入2勺油,放(fàng )入生姜、春笋、牛肉片、葱段(duàn )翻炒1分钟左右。再(zài )加入生抽、老抽、蚝油翻炒(chǎo )均匀,加入少量清水半掩住春笋,盖上锅盖大(dà )火煮(zhǔ )开后转(zhuǎn )中火。煮到(dào )水快熬(áo )干的时候加(jiā )入盐,翻炒均匀稍收汁时盖上(shàng )锅盖焖。
