做法:春笋(sǔn )切成片后加少(shǎo )许盐捞出(chū )后用清水浸泡,生(shēng )姜切片(piàn ),葱(cōng )切成段(duàn )。锅烧热,倒入2勺油,放(fàng )入生姜、春(chūn )笋、牛肉(ròu )片、葱段翻炒1分钟左(zuǒ )右。再(zài )加入生抽、老抽(chōu )、蚝油翻炒(chǎo )均匀,加(jiā )入少量(liàng )清水(shuǐ )半掩住春笋,盖上(shàng )锅盖大火煮开后转中火。煮到水快熬(áo )干的时候加入盐,翻炒均匀稍收汁时盖上锅盖焖。
