做(zuò )法:春笋切成片后加(jiā )少许盐捞出后用清水浸泡,生姜切片,葱切成段。锅(guō )烧(shāo )热(rè ),倒入2勺油,放入生姜、春笋、牛(niú )肉片、葱段(duàn )翻炒1分钟左右。再加入生抽、老抽(chōu )、蚝(háo )油翻炒均匀,加入(rù )少量清(qīng )水半掩住春笋(sǔn ),盖上锅盖大火煮(zhǔ )开(kāi )后转中火。煮到水快熬干的时(shí )候加入盐(yán ),翻炒均匀稍收汁时盖上(shàng )锅(guō )盖焖。
