做法(fǎ ):春笋切成(chéng )片后加(jiā )少许盐(yán )捞出后用清水浸(jìn )泡,生姜切片,葱切成段。锅烧(shāo )热,倒入2勺油,放入生姜(jiāng )、春笋、牛肉片、葱段翻炒1分钟左右(yòu )。再加入(rù )生抽、老(lǎo )抽、蚝油翻炒均匀,加入少量(liàng )清水半掩住春笋,盖上(shàng )锅(guō )盖(gài )大火煮开后转(zhuǎn )中火。煮到水快熬(áo )干(gàn )的时候加入盐,翻炒均匀稍收汁时盖上(shàng )锅盖焖。
