做法:春笋(sǔn )切成片后加少许盐捞(lāo )出后用清水浸泡,生姜切片(piàn ),葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒(chǎo )1分钟(zhōng )左右。再加入生抽、老(lǎo )抽、蚝油翻炒均匀,加入少量(liàng )清水半掩住(zhù )春笋,盖上(shàng )锅盖(gài )大火煮开后转中(zhōng )火(huǒ )。煮到(dào )水快熬(áo )干(gàn )的时候加入(rù )盐,翻炒均匀(yún )稍收汁时盖上(shàng )锅盖焖。
