做法:春笋切成片后加少许盐(yán )捞出后用清(qīng )水(shuǐ )浸泡,生姜(jiāng )切片,葱切成段。锅烧热,倒入2勺油(yóu ),放入生(shēng )姜、春(chūn )笋、牛肉片、葱段翻炒1分钟(zhōng )左(zuǒ )右。再(zài )加入生抽、老抽、蚝油翻(fān )炒(chǎo )均匀,加入少量清水半掩住春笋,盖上锅盖(gài )大火(huǒ )煮开后转(zhuǎn )中火(huǒ )。煮(zhǔ )到水快熬干的时候加入盐,翻炒均匀稍收汁时(shí )盖上(shàng )锅(guō )盖焖。
