做(zuò )法:春笋切成片后加少许盐捞出后用清水(shuǐ )浸泡(pào ),生姜(jiāng )切片,葱(cōng )切成段。锅烧热,倒(dǎo )入2勺油(yóu ),放入生姜、春(chūn )笋、牛肉片、葱(cōng )段翻炒1分钟(zhōng )左右。再加入生抽、老抽、蚝(háo )油(yóu )翻炒均匀(yún ),加入少量(liàng )清(qīng )水半掩住春(chūn )笋,盖上锅盖大火煮(zhǔ )开后转中火。煮到水快熬干的时候加入盐,翻炒均匀稍收汁时(shí )盖上锅盖焖。
