做法:春笋切成片后(hòu )加少许盐捞出(chū )后用清水浸泡,生姜(jiāng )切片,葱切成段。锅烧热,倒(dǎo )入2勺油,放(fàng )入(rù )生姜、春笋、牛(niú )肉片、葱段翻炒1分钟左右。再(zài )加(jiā )入(rù )生抽、老抽、蚝油翻炒(chǎo )均匀,加入少量清(qīng )水半(bàn )掩住春笋,盖上锅盖大火(huǒ )煮开后转中火。煮到(dào )水快熬干(gàn )的时候加入盐,翻(fān )炒均匀稍收(shōu )汁时盖(gài )上锅盖焖。
