做法:春笋切成片后加少许盐(yán )捞出后用清水(shuǐ )浸泡,生(shēng )姜切片,葱切成段。锅(guō )烧(shāo )热,倒入2勺(sháo )油,放入(rù )生(shēng )姜、春笋(sǔn )、牛(niú )肉片(piàn )、葱段翻炒1分钟左右。再加入生抽、老(lǎo )抽、蚝油翻炒均匀,加入少量(liàng )清水半掩(yǎn )住春笋,盖上锅盖大火煮(zhǔ )开(kāi )后转中火。煮到水快熬(áo )干的时候加入(rù )盐,翻炒均匀稍(shāo )收汁时盖上锅盖焖。
