做(zuò )法:春笋切成片后(hòu )加少(shǎo )许盐捞出(chū )后用清水浸泡,生姜(jiāng )切片,葱切成(chéng )段。锅(guō )烧热,倒(dǎo )入2勺油,放入生姜、春笋(sǔn )、牛肉片、葱段(duàn )翻炒1分钟(zhōng )左右。再加入生(shēng )抽、老(lǎo )抽、蚝油翻炒均匀,加入少量清(qīng )水半掩住(zhù )春笋,盖上锅盖(gài )大火煮开后转中火。煮到(dào )水快熬干(gàn )的时候(hòu )加入盐,翻炒均匀稍收汁时盖上锅盖焖。
