做法(fǎ ):春笋切成片后加(jiā )少许盐捞出后(hòu )用(yòng )清水浸泡,生(shēng )姜切片,葱切成段。锅烧(shāo )热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟(zhōng )左右(yòu )。再加(jiā )入生抽、老抽、蚝油翻炒均匀,加入少量(liàng )清(qīng )水半掩住春笋,盖(gài )上锅(guō )盖大火煮(zhǔ )开后转中(zhōng )火。煮到水快(kuài )熬(áo )干的时候(hòu )加入盐,翻炒均匀稍收(shōu )汁时盖上锅盖焖。
