做法:春笋切成片后加少许(xǔ )盐(yán )捞(lāo )出(chū )后(hòu )用清水浸泡,生姜切片,葱(cōng )切成段。锅烧热,倒入2勺油,放入(rù )生姜、春笋、牛肉片(piàn )、葱段翻炒1分钟左(zuǒ )右。再加入生抽、老抽、蚝(háo )油翻炒均匀,加入少量清(qīng )水半掩住春笋,盖(gài )上锅盖大(dà )火煮开后转中火(huǒ )。煮到水(shuǐ )快熬干(gàn )的时候(hòu )加入盐,翻炒均匀稍收(shōu )汁时(shí )盖上锅盖焖。
