做法:春(chūn )笋切成片(piàn )后加少许盐捞出(chū )后用清(qīng )水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放(fàng )入生姜、春笋(sǔn )、牛肉(ròu )片、葱段翻炒1分钟左右。再加(jiā )入生抽、老抽、蚝油翻炒(chǎo )均匀,加(jiā )入少量清(qīng )水半掩住春笋,盖上(shàng )锅盖大火煮开(kāi )后转中火(huǒ )。煮到(dào )水快熬干的(de )时候加入盐(yán ),翻炒均匀稍(shāo )收汁时盖(gài )上(shàng )锅盖焖。
