做法:春笋切成片后(hòu )加少许盐捞出后用清(qīng )水浸泡(pào ),生(shēng )姜切片,葱切成段(duàn )。锅烧热(rè ),倒(dǎo )入2勺油,放入生姜、春笋、牛肉片、葱(cōng )段(duàn )翻炒1分钟(zhōng )左右(yòu )。再加入生抽、老抽、蚝油翻炒均匀,加(jiā )入少量清水(shuǐ )半掩住春笋,盖上锅盖大火煮开(kāi )后(hòu )转中火。煮到(dào )水快熬干的时候加入(rù )盐,翻炒均匀稍收汁时盖(gài )上锅盖焖。
