做法(fǎ ):春笋切成(chéng )片后加少(shǎo )许盐(yán )捞出后用清水(shuǐ )浸泡,生姜切片,葱切成段。锅烧热(rè ),倒入2勺油,放入生姜、春(chūn )笋、牛肉片、葱段翻炒1分(fèn )钟左右。再加入生抽、老抽、蚝油翻炒(chǎo )均匀,加入少量清水半掩住春笋,盖(gài )上锅盖大火煮开后转中火。煮到(dào )水(shuǐ )快熬(áo )干的时候(hòu )加入(rù )盐,翻炒均匀稍收汁时盖上锅盖(gài )焖。
