做法:春(chūn )笋切(qiē )成片(piàn )后加少许盐捞出后用清(qīng )水浸泡(pào ),生姜切片,葱切成(chéng )段。锅烧热(rè ),倒入2勺油,放入(rù )生姜、春笋、牛肉片(piàn )、葱段翻炒(chǎo )1分钟左右。再加入生抽、老抽(chōu )、蚝油翻炒均匀,加入少量清水(shuǐ )半掩住春笋,盖上(shàng )锅盖大(dà )火煮开后转中火。煮(zhǔ )到水快熬干的时(shí )候加入盐,翻炒均匀稍收汁时(shí )盖上锅盖焖(mèn )。
