做法:春(chūn )笋切(qiē )成片后加少许盐捞(lāo )出后用清水浸泡(pào ),生姜切片,葱切成(chéng )段。锅(guō )烧热,倒(dǎo )入2勺油,放入生姜、春笋、牛肉片、葱(cōng )段翻炒1分(fèn )钟左右。再加入生抽、老抽(chōu )、蚝油翻炒均匀,加入少量清(qīng )水半掩住春笋,盖上锅盖大火煮(zhǔ )开后(hòu )转(zhuǎn )中火。煮到(dào )水快熬干的时候加入(rù )盐,翻炒均(jun1 )匀(yún )稍收汁时(shí )盖上锅盖(gài )焖。
