做法:春(chūn )笋切成(chéng )片后加少许盐捞出后用清水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺(sháo )油,放入生姜、春(chūn )笋、牛肉片、葱段翻(fān )炒(chǎo )1分钟(zhōng )左右。再加(jiā )入生抽、老抽(chōu )、蚝油翻炒均匀,加入少(shǎo )量(liàng )清(qīng )水半(bàn )掩住(zhù )春笋(sǔn ),盖上锅盖大火煮开后转中火。煮到水快熬(áo )干的时候加入盐,翻(fān )炒均匀稍收汁时盖上锅盖(gài )焖。
