做法:春笋切成片(piàn )后加少许盐捞出后用清水浸泡(pào ),生姜(jiāng )切片,葱(cōng )切成段。锅烧热,倒入2勺(sháo )油,放入(rù )生姜、春笋、牛肉片、葱段(duàn )翻炒1分钟左右。再(zài )加入(rù )生抽、老抽、蚝油翻炒均匀,加入少(shǎo )量清水(shuǐ )半掩住春笋(sǔn ),盖上锅盖大火煮开后转(zhuǎn )中火(huǒ )。煮到水快熬干(gàn )的时候加入(rù )盐,翻炒均匀稍收汁时盖上(shàng )锅盖焖。
