做(zuò )法:春笋切成片后加(jiā )少许盐(yán )捞出后用清水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油(yóu ),放(fàng )入生姜、春笋、牛肉片、葱(cōng )段翻(fān )炒1分(fèn )钟左右。再加入生抽、老抽、蚝(háo )油翻炒(chǎo )均匀,加入少量清(qīng )水半掩(yǎn )住春(chūn )笋(sǔn ),盖上(shàng )锅盖(gài )大(dà )火煮开后转中火。煮(zhǔ )到水(shuǐ )快熬干(gàn )的时候加入盐,翻炒均匀稍收汁时盖上锅盖焖。
