做法:春(chūn )笋切成片(piàn )后加少许盐捞出后用清(qīng )水浸泡,生姜(jiāng )切片,葱切成段(duàn )。锅烧热,倒入2勺油,放入(rù )生姜、春笋(sǔn )、牛(niú )肉片、葱段翻炒1分钟左右。再(zài )加入生抽、老抽、蚝油翻炒均匀(yún ),加入少量清水半(bàn )掩住春笋(sǔn ),盖上锅盖大火煮开(kāi )后转中火。煮到水(shuǐ )快熬干的时候加入(rù )盐,翻炒均匀稍收汁时盖(gài )上锅盖焖(mèn )。
