做法:春(chūn )笋切成片后加少(shǎo )许盐捞出(chū )后用清水浸泡,生(shēng )姜切片,葱切成段。锅烧(shāo )热,倒入2勺(sháo )油,放(fàng )入(rù )生姜、春笋、牛肉片(piàn )、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油翻炒均匀(yún ),加入少量(liàng )清水半掩住春(chūn )笋,盖(gài )上锅(guō )盖大火煮开后转中火。煮到水快熬干的时候加入盐,翻(fān )炒(chǎo )均(jun1 )匀稍收汁时盖上锅(guō )盖(gài )焖。
