做(zuò )法:春笋切成片后加少许盐捞出(chū )后用清水(shuǐ )浸泡,生姜切片,葱切成段。锅烧热,倒(dǎo )入2勺(sháo )油,放入生姜、春笋、牛肉片、葱(cōng )段翻炒1分钟(zhōng )左右。再加入生抽、老抽(chōu )、蚝油翻炒均匀,加入少量清水半(bàn )掩住春笋,盖上锅盖大火煮开后转中火。煮(zhǔ )到水快熬(áo )干(gàn )的时候加入盐(yán ),翻炒(chǎo )均匀稍收汁时盖上(shàng )锅盖(gài )焖。
