做法:春(chūn )笋切成片后加少许盐捞(lāo )出(chū )后用清水浸泡,生(shēng )姜切片,葱切成段(duàn )。锅烧(shāo )热(rè ),倒(dǎo )入2勺油,放(fàng )入生姜、春(chūn )笋、牛肉片、葱段翻(fān )炒(chǎo )1分(fèn )钟左右。再加入生(shēng )抽、老抽(chōu )、蚝油翻炒均匀,加入少(shǎo )量清水半(bàn )掩住春笋,盖上锅(guō )盖大火煮开后转中火。煮到水快熬干的时候加入盐,翻(fān )炒均匀稍收汁时盖(gài )上锅盖(gài )焖。
