做法:春笋切成片后加少许盐捞出后用清水浸泡,生姜切片,葱切成段。锅烧热(rè ),倒(dǎo )入2勺油(yóu ),放入生姜(jiāng )、春笋、牛肉片、葱(cōng )段翻炒1分钟左右。再加入生抽、老抽(chōu )、蚝油翻(fān )炒均匀(yún ),加入少(shǎo )量清水半掩住(zhù )春笋(sǔn ),盖(gài )上锅(guō )盖大火煮开后转中火。煮到水(shuǐ )快熬干的时候加(jiā )入盐,翻炒均匀(yún )稍(shāo )收汁时(shí )盖(gài )上锅盖焖。
