做法:春笋切成片后加(jiā )少(shǎo )许盐捞出后(hòu )用清水(shuǐ )浸泡,生姜切片,葱切成段。锅烧(shāo )热,倒入2勺油,放入生(shēng )姜、春笋、牛肉(ròu )片、葱段翻炒1分钟(zhōng )左右。再加(jiā )入生(shēng )抽、老抽、蚝油翻炒均匀,加入少量清(qīng )水半掩住(zhù )春笋,盖上锅盖大(dà )火煮(zhǔ )开后转中火(huǒ )。煮(zhǔ )到水快熬干(gàn )的时(shí )候加入盐,翻炒均匀稍收汁(zhī )时盖(gài )上锅盖焖。
