做法:春(chūn )笋(sǔn )切成片后加少许盐捞出后用清(qīng )水浸泡,生(shēng )姜切片,葱(cōng )切成段。锅烧(shāo )热,倒入2勺油(yóu ),放入生姜、春笋、牛肉片、葱段(duàn )翻炒1分(fèn )钟左右。再加入生抽、老抽、蚝油(yóu )翻炒均匀,加入少量清(qīng )水半掩(yǎn )住春笋(sǔn ),盖上(shàng )锅(guō )盖(gài )大火(huǒ )煮开后转(zhuǎn )中火。煮到(dào )水快熬干的时候加入盐,翻炒均匀稍收汁时(shí )盖上锅盖焖。
