做法:春笋切成片后加少许盐捞出后用清(qīng )水浸泡,生姜切片,葱切成段。锅烧热,倒入(rù )2勺油(yóu ),放入生姜、春笋、牛肉片、葱段翻(fān )炒(chǎo )1分钟(zhōng )左右。再加入(rù )生抽、老抽、蚝油翻炒均匀,加入(rù )少(shǎo )量清水(shuǐ )半掩住春笋,盖上锅(guō )盖大火煮开后转中火。煮到水快(kuài )熬干的时候(hòu )加入盐,翻炒均匀稍收汁时盖(gài )上(shàng )锅盖(gài )焖。
