做法:春笋切成片后加少(shǎo )许盐捞(lāo )出后用清水浸泡,生姜(jiāng )切片(piàn ),葱切(qiē )成段。锅烧热,倒入2勺油(yóu ),放入生姜、春笋、牛肉片、葱段翻炒(chǎo )1分钟(zhōng )左右。再加入生抽、老(lǎo )抽、蚝油翻炒均匀,加入(rù )少量清水(shuǐ )半掩住春笋(sǔn ),盖上(shàng )锅盖大火煮开后转中火。煮到水快熬干的时(shí )候(hòu )加入盐,翻炒均匀稍收汁时(shí )盖(gài )上锅盖焖。
