做法(fǎ ):春(chūn )笋(sǔn )切成片后加少许盐(yán )捞出后用清水浸泡,生姜切片,葱切成段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱(cōng )段翻(fān )炒1分(fèn )钟左右。再加入生抽、老抽、蚝油翻炒均匀,加(jiā )入(rù )少量清(qīng )水半(bàn )掩住春(chūn )笋,盖(gài )上锅盖大(dà )火煮(zhǔ )开后转中火。煮到水快熬干的时(shí )候(hòu )加入盐,翻炒均匀稍收汁时盖上(shàng )锅盖焖(mèn )。
