做法:春笋切成片(piàn )后加少许(xǔ )盐捞出(chū )后用清水浸(jìn )泡,生姜切片(piàn ),葱切成段。锅烧热,倒入2勺(sháo )油,放入生姜、春(chūn )笋、牛肉片、葱段(duàn )翻炒1分钟左右。再加入生抽、老抽(chōu )、蚝油翻炒(chǎo )均匀(yún ),加入少量清水半掩住春笋,盖上锅盖大火煮开后转中火。煮到水快熬干(gàn )的时候加入(rù )盐(yán ),翻炒均匀稍收汁时(shí )盖上(shàng )锅(guō )盖焖。
