做法:春笋切(qiē )成(chéng )片后加少许盐捞出后用清(qīng )水浸泡(pào ),生姜切片,葱切成段。锅烧热,倒(dǎo )入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再加(jiā )入生抽、老抽、蚝油翻炒均匀,加(jiā )入少量(liàng )清水(shuǐ )半掩住春笋,盖上锅(guō )盖大火煮开后转中火。煮到水快(kuài )熬(áo )干的时候加(jiā )入盐,翻炒均(jun1 )匀(yún )稍收汁时(shí )盖上锅盖焖。
