做(zuò )法:春笋切成片后加少(shǎo )许盐捞(lāo )出后用清水浸泡,生姜切片(piàn ),葱切成段。锅烧(shāo )热(rè ),倒(dǎo )入2勺油(yóu ),放入生姜、春笋(sǔn )、牛(niú )肉片、葱段翻炒1分钟左右。再(zài )加(jiā )入生抽、老抽、蚝(háo )油翻炒均匀,加入(rù )少量清水半掩住春笋(sǔn ),盖上锅盖大火煮开后(hòu )转中火(huǒ )。煮到水快熬干的时(shí )候加入盐,翻炒均匀稍(shāo )收汁时(shí )盖上锅盖焖。
