做法:春(chūn )笋切成片后加少许盐捞出后用清水浸泡,生姜切片,葱切(qiē )成段。锅烧热,倒入2勺油,放入生(shēng )姜、春(chūn )笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝油(yóu )翻炒均匀,加(jiā )入(rù )少量(liàng )清(qīng )水半掩住春笋,盖(gài )上锅盖大火煮(zhǔ )开后转(zhuǎn )中(zhōng )火(huǒ )。煮到(dào )水快熬干的时候(hòu )加入(rù )盐,翻炒均匀稍收汁时(shí )盖上锅(guō )盖焖。
