做(zuò )法:春笋切成片后加少(shǎo )许(xǔ )盐捞出后用清水浸泡(pào ),生姜切片,葱切成段。锅烧(shāo )热(rè ),倒入2勺油,放入生姜(jiāng )、春(chūn )笋、牛肉片、葱段翻炒1分钟左右。再加入生抽、老抽、蚝(háo )油(yóu )翻炒均匀(yún ),加入少量清水(shuǐ )半掩住春笋,盖上锅盖(gài )大火煮开后转中火。煮(zhǔ )到水快熬干(gàn )的时(shí )候加(jiā )入盐,翻炒均匀稍收汁时盖上锅盖焖。
