做法:春笋切成片后加(jiā )少许盐捞出后用(yòng )清水浸泡(pào ),生姜(jiāng )切片,葱切成段(duàn )。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱(cōng )段翻炒1分(fèn )钟左(zuǒ )右。再加入生抽、老抽、蚝油(yóu )翻(fān )炒均匀,加入少量清水半掩(yǎn )住春笋(sǔn ),盖(gài )上(shàng )锅盖大火(huǒ )煮开后转中火。煮到水(shuǐ )快熬干的(de )时候加入盐,翻炒均匀稍收汁时盖上锅盖焖。
