做法:春(chūn )笋切成片(piàn )后(hòu )加少许盐捞(lāo )出后用清水浸泡,生姜切片,葱切(qiē )成段。锅烧热,倒入(rù )2勺油,放入生姜、春笋、牛肉片、葱段翻(fān )炒1分(fèn )钟左右。再加入生抽、老抽、蚝(háo )油翻炒均匀,加入少(shǎo )量清水半(bàn )掩住(zhù )春笋,盖上锅盖大火煮开(kāi )后(hòu )转(zhuǎn )中(zhōng )火。煮到水快熬干(gàn )的时候加入盐(yán ),翻炒均匀稍(shāo )收汁时盖上锅盖焖。
