做法:春(chūn )笋切(qiē )成片后加少许盐捞出后用(yòng )清(qīng )水浸泡,生(shēng )姜切片,葱切成段。锅烧(shāo )热,倒入2勺(sháo )油,放入生(shēng )姜(jiāng )、春笋、牛肉片、葱段翻炒1分钟左(zuǒ )右(yòu )。再加(jiā )入(rù )生抽(chōu )、老抽、蚝油翻炒均匀(yún ),加(jiā )入少量清水半掩住春笋,盖上锅(guō )盖(gài )大火煮开后转中火。煮到水快熬干的时候加入盐,翻炒均匀稍收(shōu )汁时盖上锅盖焖。
