做(zuò )法:春(chūn )笋(sǔn )切成片后加少许盐捞出后用清水浸泡,生姜切(qiē )片(piàn ),葱切成段。锅烧热,倒入(rù )2勺油,放入(rù )生姜、春笋、牛肉片、葱段(duàn )翻炒1分钟(zhōng )左右。再加入生抽、老抽(chōu )、蚝(háo )油翻炒均匀,加(jiā )入(rù )少量清水半掩住(zhù )春笋,盖上锅盖大火煮开后(hòu )转中(zhōng )火。煮到水快熬干的时候加入盐,翻炒均匀稍收汁时盖(gài )上锅(guō )盖焖。
