做法:春笋切成片后加少许盐(yán )捞出(chū )后用清水浸泡,生姜切片,葱切成(chéng )段。锅烧热,倒入2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左(zuǒ )右。再加(jiā )入(rù )生(shēng )抽、老抽、蚝(háo )油翻炒均匀(yún ),加入少量清水半掩住春笋,盖上(shàng )锅盖大火煮开(kāi )后转中火。煮到水(shuǐ )快熬干的时候加入盐,翻(fān )炒均(jun1 )匀稍收(shōu )汁时(shí )盖上锅(guō )盖(gài )焖。
