做(zuò )法:春笋(sǔn )切成(chéng )片(piàn )后加少许盐(yán )捞(lāo )出(chū )后用(yòng )清水浸泡,生姜(jiāng )切片,葱切成段(duàn )。锅(guō )烧热,倒入(rù )2勺油,放入生姜、春笋、牛肉片、葱段翻炒1分钟(zhōng )左右。再加入生(shēng )抽、老(lǎo )抽、蚝油翻炒均匀,加入少量清水半掩住春笋,盖上锅盖大火煮开后转(zhuǎn )中火。煮到水快(kuài )熬(áo )干的时候(hòu )加入盐,翻炒均匀稍收汁时盖上(shàng )锅盖焖。
