做法:春笋切成片(piàn )后加少许盐(yán )捞出后用清(qīng )水浸(jìn )泡,生姜切片,葱(cōng )切成段。锅烧热(rè ),倒入2勺油,放入(rù )生姜、春笋、牛(niú )肉片、葱(cōng )段翻(fān )炒(chǎo )1分(fèn )钟左右。再加入生抽、老抽、蚝油翻炒均(jun1 )匀,加入(rù )少量清水半掩住(zhù )春笋,盖上锅盖大火煮(zhǔ )开后转中火。煮到水快熬干的时候加入(rù )盐,翻炒(chǎo )均(jun1 )匀稍收汁时盖上锅(guō )盖焖。
