做(zuò )法:春笋切成(chéng )片后加少许(xǔ )盐捞出(chū )后用清水(shuǐ )浸泡,生姜切片,葱切成段(duàn )。锅(guō )烧热(rè ),倒入2勺油,放入生(shēng )姜(jiāng )、春笋、牛(niú )肉片(piàn )、葱段翻(fān )炒1分钟左右。再加(jiā )入生抽、老抽、蚝(háo )油翻炒均匀,加入(rù )少量清水半掩住春笋,盖上锅盖大火煮开后转中火。煮(zhǔ )到水快熬干的时候(hòu )加入盐,翻炒均匀稍收汁时盖上锅盖(gài )焖。
