做法:春笋(sǔn )切成(chéng )片后加少许(xǔ )盐(yán )捞出后用清水浸泡,生姜切片,葱切成(chéng )段。锅烧热,倒入2勺油,放(fàng )入(rù )生姜、春(chūn )笋、牛(niú )肉片、葱段翻炒1分钟左(zuǒ )右。再(zài )加入(rù )生(shēng )抽、老抽、蚝油翻(fān )炒(chǎo )均匀,加入少量清水半掩住春笋,盖上锅盖大火(huǒ )煮开后转中火。煮(zhǔ )到水快熬干的时候加入(rù )盐,翻(fān )炒均匀稍(shāo )收汁时(shí )盖上锅盖焖。
