做法:春笋切成(chéng )片后加少(shǎo )许盐(yán )捞出后用清(qīng )水浸泡,生姜切片,葱切成(chéng )段。锅烧热,倒入2勺(sháo )油,放入生姜、春笋、牛肉片、葱段翻炒1分钟左(zuǒ )右(yòu )。再加入生抽、老抽(chōu )、蚝(háo )油翻炒均(jun1 )匀,加入少量清(qīng )水半掩住(zhù )春(chūn )笋,盖上锅盖(gài )大(dà )火煮开后转中(zhōng )火。煮到(dào )水快熬干的时候加入(rù )盐,翻炒均匀稍(shāo )收汁时盖上锅盖焖。
