做(zuò )法:春笋切成片后加少许(xǔ )盐捞出后用清水浸泡,生姜(jiāng )切片,葱切成段。锅烧热,倒(dǎo )入(rù )2勺(sháo )油,放入生姜、春笋、牛肉(ròu )片、葱(cōng )段翻炒(chǎo )1分钟(zhōng )左右。再加入生抽、老(lǎo )抽(chōu )、蚝油翻炒均匀,加入少量清水半掩住春笋,盖上(shàng )锅(guō )盖(gài )大(dà )火煮开后(hòu )转中火。煮到(dào )水(shuǐ )快(kuài )熬干的时候加(jiā )入盐,翻炒均匀稍收汁时盖上锅盖焖。
