做法(fǎ ):洗净宰好鲫鱼(yú ),洗净(jìng )淮山和薏米。用清水(shuǐ )把陈皮(pí )泡软,拍裂一小(xiǎo )块姜(jiāng ),热锅,用姜块在锅上擦一遍,放(fàng )两(liǎng )勺油,待(dài )油六成热下(xià )鱼,煎至(zhì )微黄。煮沸瓦煲里的清水,放入煎煮(zhǔ )好的鲫鱼和其他材料,武火煮沸,转(zhuǎn )中(zhōng )小火煲一(yī )个半小(xiǎo )时,下盐(yán )调味即可品尝。
